Cherry tomato bruschette

Bring out the sweetness of cherry tomato – roast them in the oven, covered in olive oil and a pinch of salt, for 20 minutes at 400F (200°C). Once they’re out put them on a crunchy slice of rustic bread like ciabatta, sprinkle with goat cheese and fresh mint leaves. Drizzle olive oil on top just before serving. Serve with friends over a nice piece of music.
