When life gives you lemons / Ko ti življenje servira limone…

…make a risotto. Dead serious – this is the juiciest summer risotto ever.

…naredi rižoto. Brez heca, tole je najbolj sočna poletna rižota ever.

lemon zucchinni risotto

Lemon risotto with zucchinni

  • 3 cups vegetable stock
  • 1 1/3 cups arborio rice
  • juice and zestof 1 lemon
  • 2 tbsp butter
  • 2 small zucchinis
  • 2 dicer shallots
  • 2 tbsp of white wine
  • Pepper
  • Parmesan
Melt the butter and saute the rice so it becomes translucent, add diced shallots and saute some more. Pour in the white wine mix until the wine is fully absorbed. Continue with vegetable stock one ladle at the time, each time waiting for it to be completely absorbed. Cook for 10 minutes, last 3 minutes add zucchinis, lemon juice, zest, pepper and spoonfull of butter. Serve with shredded parmesan piecces.

Limonina rižota z bučkami

  • 3 skodelice zelenjavne jušne osnove
  • 1 1/3 skodelice arborio riža
  • sok in naribana lupina ene limone
  • 2 veliki žlici masla
  • 2 manjši bučki
  • 2 nasekljani šalotki
  • 2 veliki žlici belega vina
  • Ščep belega popra
  • parmezan

Segrejemo maslo in na stopljenem maslu popražimo riž, da postekleni, dodamo še nasekljano šalotko. Zalijemo z belim vinom in ga do suhega pokuhamo. Nadaljujemo z jušno osnovo, ki jo dodajamo po posameznih zajemalkah in vsakič počakamo, da se do konca pokuha. Zadnje 3 minute v rižoto vmešamo narezane bučke, limonin sok in lupino, poper in žlico masla. Postrežemo z opilki parmezana.
